Warm Chicken Potato Salad
1 3 cups chicken or turkey leftover
2 2 cups roasted potatoes leftover
3 2 medium orange, peeled and sliced thinly
4 10 cherry tomatoes
For the vinagrette
juice of 1/2 lemon
2 tbsp cilantro leaves, chopped
1 1/2 tsp extra virgin olive oil
2 tbsp honey
1/4 tsp fine sea salt
Chop the chicken, potatoes, orange and cherry tomatoes. Mix all together.
Combine all ingredients in a small jar with a tight-fitting lid. Shake before serving.
