Warm Chicken Potato Salad ⁠

1 3 cups chicken or turkey leftover⁠
2 2 cups roasted potatoes leftover ⁠
3 2 medium orange, peeled and sliced thinly ⁠
4 10 cherry tomatoes ⁠

For the vinagrette ⁠

juice of 1/2 lemon ⁠
2 tbsp cilantro leaves, chopped⁠
1 1/2 tsp extra virgin olive oil ⁠
2 tbsp honey ⁠
1/4 tsp fine sea salt ⁠

Chop the chicken, potatoes, orange and cherry tomatoes. Mix all together. ⁠
Combine all ingredients in a small jar with a tight-fitting lid. Shake before serving. ⁠
