Pumpkin Gnocchi

Ingredients:
▪️ 1 medium potato, boiled, peeled, and puréed
▪️ 1¼ cups all-purpose flour
▪️ 2 tbsp corn starch
▪️ ¾ cup pumpkin purée
▪️ ⅓ cup grated parmesan
▪️ 1 egg yolk
▪️ Salt and pepper, to taste
▪️ A handful of pepitas
▪️ Pasta cheese sauce, to serve

Instructions:
1. In a large bowl, mix together the potato, flour, corn starch, pumpkin purée, parmesan, and egg yolk.
2. Lightly flour your surface and knead the dough until smooth and soft.
3. Scoop a tablespoon of dough, roll into a ball, and press a pepita in the center.
4. Use a toothpick to gently press lines around the sides for that pumpkin shape.
5. Bring a pot of water to a boil and cook gnocchi for 3–4 minutes or until they rise to the top.
6. Remove with a slotted spoon and serve warm with cheese sauce.
