Ingredients⁠
1. 2 tbsp extra virgin olive oil⁠
2. 1 small red onion, chopped⁠
3. 1 bunch asparagus, trimmed + sliced⁠
4. 2 cups peas⁠
5. 2 cloves garlic, minced⁠
6. 1 cup instant polenta⁠
7. 2 cups vegetable broth⁠
8. 1 cup grated parmesan (plus more to serve)⁠
9. 2 tbsp butter⁠
10. Salt + pepper to taste⁠
11. 1 tbsp fresh thyme leaves⁠
⁠
Instructions⁠
1. Preheat your Fritaire to 350°F.⁠
2. Add 1 tbsp olive oil, onion, asparagus, and peas to the bowl. Air fry for 10 mins.⁠
3. Remove veggies; add remaining olive oil.⁠
4. Stir in polenta, salt, pepper, and broth. Whisk to combine.⁠
5. Bake for 15 mins. Whisk in cheese and butter.⁠
6. Bake 8–10 mins more, until creamy. Whisk again if needed.⁠
7. Serve with veggies, a drizzle of olive oil, and extra parmesan.⁠
