Peanut Butter Noodles

PEANUT BUTTER NOODLES⁠

Ingredients:⁠
▪️ 3 oz rice noodles or spaghetti noodles⁠
▪️ 1 small carrot, peeled and thinly sliced⁠
▪️ ⅓ cup shredded red cabbage⁠
▪️ 1 cup kale, chopped⁠
▪️ 2 tbsp cilantro leaves, chopped⁠
▪️ 8 mint leaves, chopped⁠

For the peanut sauce:⁠
▪️ 1 tbsp vegetable oil⁠
▪️ 2 cloves garlic, minced⁠
▪️ 2 tsp chili flakes⁠
▪️ ⅓ cup peanut butter⁠
▪️ ½ lime, juiced⁠
▪️ 3 tbsp soy sauce⁠
▪️ 1 tbsp maple syrup⁠
▪️ 2 tbsp water⁠
▪️ Salt and pepper, to taste⁠

Instructions:⁠
1. Cook noodles in salted boiling water until al dente; save some water for later.⁠
2. In a medium bowl, whisk together all peanut sauce ingredients — add a splash of noodle water if too thick.⁠
3. Toss in noodles, carrot, cabbage, kale, cilantro, and mint. Mix well until coated.⁠
4. Serve warm and top with extra herbs if you’d like. 🌿⁠
