š¤ 3 oz rice noodles or spaghettiā
š¤ 1 small carrot, peeled and thinly slicedā

cup red cabbage, shreddedā
š¤ 1 cup kale, choppedā
š¤ 2 tbsp cilantro, choppedā
š¤ 8 mint leaves, choppedā

PEANUT SAUCEā
š¤ 1 tbsp vegetable oilā
š¤ 2 cloves garlic, mincedā
š¤ 2 tsp chili flakesā
š¤ ā
cup peanut butterā
š¤ Juice of ½ limeā
š¤ 3 tbsp soy sauceā
š¤ 1 tbsp maple syrupā
š¤ 2 tbsp water (plus reserved noodle water as needed)ā
š¤ Salt and pepper, to tasteā

INSTRUCTIONSā
1ļøā£ Cook noodles in salted boiling water until al dente. Reserve some noodle water, then drain.ā
2ļøā£ In a bowl, whisk together all peanut sauce ingredients until smooth. Add a splash of reserved noodle water if the sauce is too thick.ā
3ļøā£ Add the cooked noodles, carrot, cabbage, kale, cilantro, and mint to the sauce. Toss until evenly coated.ā
