INGREDIENTS⁠
šŸ¤ 3 oz rice noodles or spaghetti⁠
šŸ¤ 1 small carrot, peeled and thinly sliced⁠
šŸ¤ ā…“ cup red cabbage, shredded⁠
šŸ¤ 1 cup kale, chopped⁠
šŸ¤ 2 tbsp cilantro, chopped⁠
šŸ¤ 8 mint leaves, chopped⁠

PEANUT SAUCE⁠
šŸ¤ 1 tbsp vegetable oil⁠
šŸ¤ 2 cloves garlic, minced⁠
šŸ¤ 2 tsp chili flakes⁠
šŸ¤ ā…“ cup peanut butter⁠
šŸ¤ Juice of ½ lime⁠
šŸ¤ 3 tbsp soy sauce⁠
šŸ¤ 1 tbsp maple syrup⁠
šŸ¤ 2 tbsp water (plus reserved noodle water as needed)⁠
šŸ¤ Salt and pepper, to taste⁠

INSTRUCTIONS⁠
1ļøāƒ£ Cook noodles in salted boiling water until al dente. Reserve some noodle water, then drain.⁠
2ļøāƒ£ In a bowl, whisk together all peanut sauce ingredients until smooth. Add a splash of reserved noodle water if the sauce is too thick.⁠
3ļøāƒ£ Add the cooked noodles, carrot, cabbage, kale, cilantro, and mint to the sauce. Toss until evenly coated.⁠
