Meal Prep Veggie Breakfast Burritos

1 small yellow onion, chopped ⁠
1 small red bell pepper, chopped ⁠
1 small head broccoli, chopped ⁠
1 tbsp extra virgin olive oil⁠
1 tsp paprika ⁠
1/2 tsp ground cumin ⁠
salt and pepper ⁠
6 slices cheddar cheese ⁠
4 large tortilla wraps ⁠

For the egg mixture ⁠

Reheat oven to 400F ⁠
To a medium non-stick baking sheet transfer the veggies, spices, salt, pepper and olive oil. ⁠
Cook for 30 minutes or until the broccoli is fork tender. ⁠
In a medium mixing bowl, mix together the ingredients of the egg mixture, pour over the veggies ⁠
Transfer the tray to the oven and bake for 10-15 minutes or until egg mixture is firm ⁠
Once cooled, cut into 4 rectangular pieces ⁠
Wrap each egg rectangle into a tortilla then freeze for up to 3 months. ⁠
