Meal Prep Veggie Breakfast Burritos

1 small yellow onion, chopped
1 small red bell pepper, chopped
1 small head broccoli, chopped
1 tbsp extra virgin olive oil
1 tsp paprika
1/2 tsp ground cumin
salt and pepper
6 slices cheddar cheese
4 large tortilla wraps
For the egg mixture
Reheat oven to 400F
To a medium non-stick baking sheet transfer the veggies, spices, salt, pepper and olive oil.
Cook for 30 minutes or until the broccoli is fork tender.
In a medium mixing bowl, mix together the ingredients of the egg mixture, pour over the veggies
Transfer the tray to the oven and bake for 10-15 minutes or until egg mixture is firm
Once cooled, cut into 4 rectangular pieces
Wrap each egg rectangle into a tortilla then freeze for up to 3 months.
