Grilled Zucchini Salad

GRILLED ZUCCHINI SALAD⁠
(A bright, smoky summer salad 🥗🌽)⁠

Ingredients:⁠
▪️ 1 large red onion, very thinly sliced⁠
▪️ ¾ cup white vinegar⁠
▪️ 1 medium zucchini, ends trimmed⁠
▪️ 2 corn cobs⁠
▪️ ⅓ cup feta, crumbled⁠
▪️ ⅓ cup walnuts, toasted and roughly chopped⁠
▪️ Salt and pepper, to taste⁠

For the dressing:⁠
▪️ Juice of 1 lemon⁠
▪️ 1 garlic clove, finely grated⁠
▪️ 1 tbsp extra virgin olive oil⁠
▪️ Salt and pepper, to taste⁠

Instructions:⁠
1. Marinate red onion in ¼ cup vinegar; set aside.⁠
2. Slice zucchini into rings and marinate in remaining vinegar; set aside.⁠
3. Heat a grill pan over medium heat. Brush corn cobs with olive oil and grill 3–4 mins per side until charred.⁠
4. Remove corn, then grill marinated zucchini until tender.⁠
5. Let corn cool, then cut kernels off the cob.⁠
6. Mix dressing ingredients in a small bowl.⁠
7. In a large bowl, combine marinated onion, zucchini, corn, and feta.⁠
8. Drizzle with dressing, toss gently, and garnish with toasted walnuts.⁠
