Egg & Veggie Tortilla

(A hearty, cheesy wrap with a fresh kick 🌯✨)⁠

Ingredients:⁠
▪️ 1 large flour tortilla⁠
▪️ 2 eggs, beaten⁠
▪️ ¼ tsp garlic powder⁠
▪️ ¼ tsp onion powder⁠
▪️ 2 tsp extra virgin olive oil⁠
▪️ ¼ small green bell pepper, finely chopped⁠
▪️ ¼ cup cooked black beans (or red beans)⁠
▪️ 2 slices cheddar cheese⁠
▪️ A handful of cherry tomatoes, halved⁠
▪️ Salt and pepper, to taste⁠
▪️ Fresh cilantro leaves⁠
▪️ Fresh salsa or hot sauce⁠

Instructions:⁠
1. In a skillet, sauté green bell pepper in olive oil until slightly soft. Set aside.⁠
2. Beat eggs with garlic powder, onion powder, salt, and pepper. Pour into the same skillet and cook for 1 minute.⁠
3. Place tortilla on top of the egg, cook for 1 minute, then flip so tortilla is on the bottom.⁠
4. Add cheese, bell pepper, beans, and tomatoes. Cook until cheese melts.⁠
5. Top with cilantro and hot sauce, fold in half, and transfer to your UVI.⁠
