Creamy Beef Pasta

Ingredients:
▪️ 1 tbsp extra virgin olive oil
▪️ 1 garlic clove, minced
▪️ ½ yellow onion, finely chopped
▪️ ½ tsp smoked paprika
▪️ ¼ tsp ground nutmeg
▪️ ½ cup dry white wine
▪️ 1 tbsp fresh thyme leaves
▪️ ½ lb ground beef
▪️ 1 cup tomato passata
▪️ 1 cup beef stock
▪️ ⅓ cup heavy cream
▪️ 7 oz pasta (fusilli, penne, or other short pasta)
▪️ ⅓ cup grated parmesan
▪️ Salt and pepper
▪️ Fresh parsley leaves, chopped
Instructions:
1. Heat olive oil in a large pot over medium heat. Add onion and cook until soft and golden.
2. Stir in garlic and cook until fragrant.
3. Add smoked paprika, nutmeg, thyme, and ground beef. Cook for 2–3 minutes until browned.
4. Pour in white wine and let it reduce slightly.
5. Stir in tomato passata, beef stock, and cream. Add uncooked pasta and mix well.
6. Simmer for 15 minutes, stirring frequently until pasta is cooked and sauce is creamy. Add a splash of water if needed.
7. Season with salt and pepper.
8. Serve warm, topped with grated parmesan and chopped parsley.
